Ecommerce levels simply means the options you can attribute to a particular product.  These levels are limitless and can appear in any order.  For example a T-Shirt may be sold in small, medium and large Sizes, different colours, different logos and come with a back print or not.  These four options could of course be dealt with by setting up individual carts, but for the best user experience we can use levels to combine these choices into one cart only.
